Arugula with Parmesan Salad
serves 4
Ingredients
- 4 C fresh arugula, stemmed, cleaned, dried and chilled
- 1/4 C fresh lemon juice
- 1/2 C olive oil
- 1/2 t kosher salt
- 1/4 t pepper
- Parmesan cheese, shaved
Instructions
- Whisk together the lemon juice, olive oil, salt & pepper.
- Toss the dressing with the arugula, plate, garnish with the cheese.
- Plate and serve chilled.
